部門長との調整

レストランのサービス品質基準が満たされるように、部門責任者がシフトの開始時に部門スタッフにサービスエリアの清掃作業を割り当てる際にサポートします。
新入社員の指導とトレーニングにおいて部門長をサポートします。
建設部門責任者と連携し、サービス品質を向上させるためのアイデアを提案します。
部門長不在時の業務および人員の統括、監督、調整を行う。
新しい飲料メニューが適用されたり、飲料メニューの情報が変更されたりしたときに、システムを迅速に編集してスムーズなサービス日を確保するために、部門長がメニューの変更を会計担当者に通知するのを支援します。

2. FOHとキッチン部門のスタッフから情報を受け取る

注文情報を受け取り、スタッフからのメモ：ドリンク（ビール、紅茶キノコフルーツジュース、ワイン、アレルギー）の項目には必ず顧客の座席番号を入れ、サービス中の混乱を避けるために重要な情報を太字でマークし、特にアレルギーのある顧客に対して間違ったアイテムを配置しないようにします。
サービスエリアのすべてのスタッフに情報を伝達し、キッチンメニューの変更を全員が認識できるようにします。

3. 食事と飲み物の時間を調整します。

キッチン部門と連携して、各テーブルに正しい順番で料理を準備します。
料理を客に出す前に食器を準備しておきます。
部門長が不在の場合は、部門長の支払いを支援します。
各料理の準備にかかる時間を正確に把握し、適切な注文時間を調整します。
食事がテーブルに届く前に飲み物が確実に提供されるよう、水道部門と調整してください。
メニューに従って、正しい料理、正しい飲み物、食べ物に適した食器を確認してください（食器が準備されている場合のみ、食べ物をテーブルに持ってきてください）。
最初に小さいテーブルを注文し、後から大きいテーブルを注文します。
お客様が退席される際に温度を保つために、食器をキッチンエリアの下に保管するようにキッチンに伝えてください。
